Ingredients

Mustard sauce:

3 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 tablespoon prepared English or Dijon mustard
1 teaspoon lemon juice.
Pinch of sugar.
Salt and white pepper.

Herring:
four Herring
1 cup milk
1/2 cup quick-cooking or regular rolled oats
salt and pepper.
5 tablespoons butter or lard.
Lemon sauces.

How to Make.

To make sauce, melt butter in a small saucepan. Stir in flour, stirring constantly, cook 2 min.. Slowly stir in milk, stir well simmering 5 min.. Stir in mustard, lemon juice and sugar. Season with salt and white pepper. Keep warm while preparing herring.

To prepare Herring, bonefish, if desired. Dip each fish in the milk, then into rolled oats; season with salt and pepper. Melt butter or lard in a large skillet. Cook fish and hot butter or lard. 8 min. on each side or until browned and crisp. Arrange cooked Herring on a warm platter, garnish with lemon slices. Serve sauce separately. Makes four servings.
